Tuna Poke Bowl

INGREDIENTS

For the Tuna Poke Bowl:
1 pound sushi grade tuna, cut ½-inch cubes
¼ cup thinly sliced sweet onion
¼ cup thinly sliced cucumber
Half of an avocado, sliced
1 small carrot, thinly sliced or shredded
Garnishes: lime, sesame seeds, red pepper flakes

For the Dressing:
1 Tablespoon minced garlic
1 Tablespoon minced ginger
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes, plus more for garnishing
¼  cup coconut aminos or soy sauce
¼  cup toasted sesame oil
4 teaspoons sesame seeds, plus more for garnishing

DIRECTIONS

Dressing:
Make the dressing by whisking together all ingredients in a small bowl until thoroughly mixed.

Pour half of the dressing over the tuna and stir to evenly coat all pieces. Add the tuna to a bowl and surrounded with veggies. Drizzle remaining dressing over everything and garnish with lime juice, red pepper flakes and sesame seeds if desired.
