Brown Rice

SERVES 6-8 As a Side

INGREDIENTS

2 cups organic brown rice
3 ½ cups chicken stock or water
2 Tablespoons olive oil
Pinch of sea salt 

DIRECTIONS

Stir together the brown rice, chicken stock, olive oil and sea salt in a medium saucepan and bring to a boil. Cover with a tight-fitting lid, reduce the heat to a low simmer and cook for 45 minutes, or until the water has been absorbed. Remove from the heat (with the lid on) and let steam for about 10 minutes. Fluff with a fork and serve!
